WAIPOULI — The bacon for chef Lucas Sautter’s barbecue sauce had just hit the pan when Jaye Gayagas-Youn dropped the connection Thursday during the Kaua‘i Chamber of Commerce Virtual Business After Hours at the Sheraton Kaua‘i Coconut Beach.
Fortunately, the virtual event does not feature aroma-vision, as Gayagas-Youn was joined by Ali Lahip and Chris Machorek in re-establishing the connection to resume the production just as the bacon finished its sizzling entrance and Sautter continued with the next steps of creating his specialty sauce for baby-back ribs treated with his rub.
The Kaua‘i Chamber of Commerce arrived at the virtual presentation in response to COVID-19 rules and mandates that keep crowds to a minimum. The chamber office continues to be closed to walk-in traffic.
The Business After Hours format does not change, as chamber President Mark Perriello welcomes guests — limited to the first 50 — and provides chamber updates virtually.
The broadband moves cross-island to the Sheraton Kaua‘i Coconut Beach, where Machorek welcomes guests to the resort undergoing renovations during the COVID-19 closure. He, Sautter and other remain on duty along with the rest of the resort’s leadership team.
Chamber members registered for the virtual event were also provided copies of Sautter’s demonstrated recipes so they could try them on their own.
Sautter walked guests through the creation of his baby-back rib rub, and his barbecue sauce that transformed a rack of ribs via “the magic oven” to a mouth-watering creation — what a shame, virtual has no smell-o-vision or taste-o-vision, or the socially-flavored networking.
The next commerce event is Thursday, Sept. 10, when the “Divorce Your Clock &Supercharge Your Productivity” webinar takes place, with Kim Miller-Hershon.
